For our
class, we took a field trip to the Ingardia Brothers distribution center in Santa Ana.
It is a secure facility...
...shaped in a large "L" with loading docks on the front.
There are a variety of environmentally-controlled rooms, such as this one that is a little warmer for bananas and tropical fruits.
Looking down the main staging area with pallets prepared for individual customer orders.
They have everything from fancy flowers and garnishes...
...to all of your basic staples.
A separate room specifically for dairy products.
Oils and sauces.
Canned goods.
Spices.
This area is for sorting and repacking into smaller containers.
This cold area is for processing fish.
Here are some of the scraps from today's processing.
Here is a swordfish that arrived as we were there, and the manager of the department cut a slice from the tail to inspect.
Fish that has already been processed and partitioned.
Other fish in various stages of preparation.
